Review on the Thai Chicken Curry

Here I am at 5 pm and I haven't even started dinner! I always start dinner before
5. I wanted to stick to my meals for this week. So I got my cookbook out Family Feasts for $75.00 a Week written by Mary Ostyn. This meal is start to finish 15 minutes. It is delicious. Nothing fancy mind you, but tons of taste. My husband really enjoyed this. I did not add the jalapenos to the whole skillet, I just served it as a garnish. They made a really nice kick to this though. I sent my husband out to pick one off of our jalapeno plants. Here is the recipe:

Thai Chicken Curry
serves 6

2 cups of canned or Homemade Coconut Milk
5 boneless skinless chicken breasts, cut in chunks
3 Tablespoons Thia Red Curry Paste
3 Tablespoons fish sauce or soy sauce ( I used fish sauce )
2 Tablespoons sugar
1 Tablespoon butter or olive oil
1 Jalapeno pepper, seeded and cut in SMALL pieces

Place a heavy skillet over medium heat. Add coconut milk and bring to a simmer. Cut chicken in to chunks while you wait. Once coconut milk begins to simmer, add curry paste, fish sauce, and sugar. Stir. When mixture begins to boil add chicken. Takes about 10 minutes stirring every couple of minutes. Can speed cooking by placing a lid on pan.
Near the end of cooking add butter and jalapeno. Serve with rice.

You must serve this with rice. Delicious. I am telling you it took me 15 minutes to make this. You can't even go through the McDonalds drive thru that quick!

As a side note I am really enjoying the cookbook that I mentioned earlier. It has a ton of really simple yet yummy meals and even gives you ways to make your own sauces and coconut milk. I picked mine up at Wegmans for maybe $10. Good read!

  2. Caitlin and Roman really did enjoy it, I was worried that it might be spicy. It wasn't until we put some jalapenos on top. They liked that too. They are my little spiceters, he he..... FYI even though Jack is little he did enjoy it too..
