Fresh Vegetable Soup Recipe

This is a wonderful recipe to use up all of the veggies you have just laying in the back of your crisper drawer. You know what I mean, all the stuff you just throw out at the end of the week. Well, now you can make a wonderful soup with it.

Fresh Vegetable Soup:


1tsp of oil
4 potatoes peeled and cubed (for some variety why not use a sweet potato too?)
2 garlic cloves finely minced
1 onion diced
1 massively large zucchini or 2-3 small ones
3 carrots diced
1/2 cup of leftover, fresh is best, corn

(Now here is where you can add what you like or whatever is about ready to go to the compost bin. Ideas would be yellow squash, tomato, peppers, herbs. Anything goes.)

1-2 small cans of tomato sauce ( if you only have tomato paste then just dilute it )
salt and pepper to your taste
3-4 Tbsp of SPIKE
Once off the heat add 1/2 cup of evaporated milk for creaminess.
Saute onions, garlic, potatoes until potatoes have a nice brown look. Crispy looking. Add carrot and cook 4 more minutes. Now add in zucchini and corn and any other veggies you are adding here. Stir to coat with all the goodies and then add the tomato sauce. Then add as much water as you want. If you want a thick soup don't add so much. I believe I add about 4 cups. Now season. I must say that the SPIKE seasoning is wonderful in this. It just really makes it taste great. If you don't have it then just season with whatever you like. Now let cook on medium until the potatoes and carrots are tender. Pull off heat and add evaporated milk. That is it. So easy and so delicious.
